  • 4 pieces lobster tails
For the Cowboy Butter
  • 1 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped (or 2 teaspoons dried)
  • 1 tablespoon lemon juice
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste

Preparation
  1. Preheat Your Grill or Oven: If you’re using a grill, preheat to medium-high heat. If you prefer baking, preheat your oven to 425°F (220°C).
  2. Prepare Your Lobsters: Using kitchen scissors, cut the top of the lobster shell lengthwise, stopping just before the tail. Gently pull the meat out and lay it on top of the shell.
  3. Whisk Up That Cowboy Butter: In a bowl, whisk together the melted butter, minced garlic, parsley, lemon juice, smoked paprika, salt, and pepper.
  4. Pour the Butter Over the Lobster: Generously spoon the cowboy butter over the lobster meat, ensuring it’s well-coated.
Cooking
  1. Cook the Lobster Tails: For grilling, place the lobster tails on the grill, meat side up, and grill for about 8-10 minutes or until the meat is opaque and the shell turns a vibrant red. For baking, place the lobster tails on a baking sheet and bake for 12-15 minutes or until cooked through.
  2. Serve and Enjoy: Plate the lobster tails, squeeze a bit of lemon over the top, and enjoy!

Notes

If the meat isn’t coming out easily, give it another minute or two. Serve with a side of garlic bread or a fresh salad.
