For the Cake
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups peeled and diced apples (Granny Smith or Honeycrisp work great!)
For the Cinnamon Sugar Topping
  • ½ cup granulated sugar
  • 1 teaspoon ground cinnamon

Method
 

Preparation
  1. Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease and flour your bundt pan.
  2. Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon.
  3. Combine the Wet Ingredients: In a large bowl, mix the granulated sugar, brown sugar, and vegetable oil. Add the eggs one at a time, whisking well. Mix in the vanilla extract.
  4. Combine Wet & Dry Ingredients: Gradually add the dry mixture to the wet ingredients, stirring gently until smooth.
  5. Add the Apples: Fold in the diced apples gently.
Baking
  1. Pour the batter into the prepared bundt pan and smooth the top. Bake for about 45-50 minutes, or until a toothpick comes out clean.
Topping
  1. Prepare the Topping: While the cake is baking, mix the granulated sugar and cinnamon in a small bowl.
  2. Cool and Top: Once baked, let the cake cool for about 15 minutes before removing it from the pan. Sprinkle the cinnamon sugar topping on the cake.
Serving
  1. Slice yourself a piece (or two), grab a cup of coffee or tea, and enjoy!

Notes

If the apples are particularly juicy, consider squeezing out some juice before adding them to the batter. You can also mix in other fruits like pears or cherries. Store leftovers in an airtight container for up to 5 days.
