  • 2 medium medium-sized bagels Your choice—plain, everything, sesame, or gluten-free.
  • 0.5 pound steak Flank or sirloin work well here.
  • 2 large eggs
  • 2 slices American cheese Because who can resist ooey-gooey goodness?!
  • Salt and pepper To taste
  • 1 tbsp butter For frying

  • Your favorite condiments Such as hot sauce or ketchup

Preparation
  1. Season your steak with salt and pepper. Heat up a skillet on medium-high and add a dab of butter.
  2. Cook the steak for 3-4 minutes on each side until it’s nice and juicy. Transfer it to a cutting board and slice it thinly.
Cooking
  1. In the same skillet, crack in the eggs, sunny-side up style, or scramble them if you prefer. Cook until the whites are set and the yolks are still runny (or fully cooked if you're feeling more cautious).
Assembly
  1. Cut your bagels in half and toast them to golden perfection. Optionally, spread a light layer of butter on the bagels while toasting.
  2. Start with the bottom half of the bagel, layer on your sliced steak, nestle the eggs on top, and add the American cheese.
  3. Cap it off with the top half of the bagel, appreciate your creation, and then dig in!

Notes

Feel free to add spices or herbs, like garlic powder or paprika, to the steak for that extra oomph. While American cheese is classic, experiment with cheddar, provolone, or pepper jack for a kick! Leftovers can be wrapped tightly in foil or stored in an airtight container in the fridge for about 2 days. Reheat in the microwave or eat cold if you’re starving.
