  • 1 can (10 oz) diced tomatoes with green chilies Like Rotel
  • ½ cup milk Adjust to your desired creaminess
  • 1 teaspoon taco seasoning Optional for an extra kick
  • ½ cup chopped onion Sautéed
  • to taste Fresh cilantro For garnish

Method
 

Preparation
  1. Start by melting the Velveeta cheese in a saucepan over medium-low heat. Stir occasionally to prevent burning.
  2. Once the cheese is melted, add the diced tomatoes (with their juices), milk, cooked onion, and taco seasoning. Stir until well combined and bubbly.
  3. Taste the dip and adjust seasonings as necessary.
  4. Pour the dip into a serving bowl and garnish with fresh cilantro.

Notes

If the dip is too thick, add a splash more milk. Feel free to spice it up with jalapeños or chorizo.
