Preparation
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a large bowl, combine all the dry ingredients and mix until well combined.
- Add the eggs, milk, oil, and vanilla extract, then beat the mixture on medium speed for about 2 minutes until smooth.
- Stir in the boiling water until fully combined; the batter will be thin.
Baking
- Pour the batter evenly into the prepared cake pans and bake for 30-35 minutes.
- Check doneness by inserting a toothpick; it should come out clean.
Cooling and Frosting
- Let the cakes cool in the pans for about 10 minutes, then transfer them to wire racks to cool completely.
- Once cool, frost with your favorite chocolate icing and stack the layers.
Notes
Feel free to add chocolate chips or nuts for added flavor or turn the batter into cupcakes with adjusted baking times. Store leftovers in an airtight container for up to 3 days.
