  • 4 large eggs
  • 4 strips bacon
  • 2 slices whole grain bread or your favorite bread
  • 1 medium avocado, sliced
  • 1 cup cherry tomatoes, halved
Seasoning and Cooking Ingredients

  • 1 teaspoon Olive oil for cooking
  • optional Fresh herbs for garnish (parsley or chives)

Preparation
  1. Start by heating a pan over medium heat. Drizzle a teaspoon of olive oil into the pan and let it warm up.
  2. Once the oil is shimmering, add the bacon strips into the pan. Cook until crispy and golden brown (about 6-8 minutes), flipping halfway.
  3. While the bacon is cooking, crack the eggs into a bowl and whisk them with a pinch of salt and pepper.
  4. Remove the bacon from the pan, keeping the rendered fat in the pan. Pour in the whisked eggs and stir gently until just set but still soft and fluffy.
  5. Toast the bread until golden brown while the eggs finish cooking.
  6. On a large plate, arrange the eggs, bacon, toasted bread, avocado slices, and cherry tomatoes beautifully.
  7. Optional: Sprinkle fresh herbs on top for garnish.

Notes

For fluffy eggs, add a splash of milk or cream before whisking. Try turkey bacon or plant-based alternatives if desired. Customize with sautéed mushrooms or spinach for added nutrition.
