- Start by heating a pan over medium heat. Drizzle a teaspoon of olive oil into the pan and let it warm up.
- Once the oil is shimmering, add the bacon strips into the pan. Cook until crispy and golden brown (about 6-8 minutes), flipping halfway.
- While the bacon is cooking, crack the eggs into a bowl and whisk them with a pinch of salt and pepper.
- Remove the bacon from the pan, keeping the rendered fat in the pan. Pour in the whisked eggs and stir gently until just set but still soft and fluffy.
- Toast the bread until golden brown while the eggs finish cooking.
- On a large plate, arrange the eggs, bacon, toasted bread, avocado slices, and cherry tomatoes beautifully.
- Optional: Sprinkle fresh herbs on top for garnish.
Notes
