  • 2 large eggs
  • 1/4 cup melted butter Can substitute with coconut oil for a dairy-free option.
  • 1 teaspoon vanilla extract
For the Cinnamon Roll Filling
  • 1/2 cup softened butter Should be at room temperature.
  • 1 cup brown sugar
  • 2 tablespoons ground cinnamon
For the Glaze
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your waffle iron according to the manufacturer’s instructions and grease it lightly.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, mix the milk, eggs, melted butter, and vanilla extract until bubbly and well-combined.
Making the Waffle Batter
  1. Pour the wet mixture into the dry ingredients and stir until just combined; a little lumpiness is fine.
  2. In a separate bowl, blend together the softened butter, brown sugar, and cinnamon until creamy.
Cooking the Waffles
  1. Pour about a cup of the batter into the preheated waffle iron and swirl a portion of your cinnamon filling on top.
  2. Close the lid and cook for about 4-5 minutes, or until golden brown.
Glazing and Serving
  1. Drizzle or dip the cooked waffles in the glaze made with powdered sugar, milk, and vanilla extract.

Notes

Don't overmix the batter and feel free to customize your toppings with fresh fruit, whipped cream, or nuts. You can make the cinnamon filling in advance and store it in the fridge.
