  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a large bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, cream together the softened butter and sugar until light and fluffy (about 3 minutes).
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry mix to the butter mixture, alternating with the buttermilk. Start and end with the dry mix.
  6. Fold in the diced apples and, if using, the nuts.
  7. Spread the batter evenly into the greased loaf pan.
Baking
  1. Bake in the oven for about 60-70 minutes until a toothpick inserted into the center comes out clean.
Cooling
  1. Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack.
  2. Slice and enjoy the warm, fragrant goodness!

Notes

Granny Smith apples work well for tartness, Honeycrisp for sweetness. Can add nutmeg or caramel syrup for extra flavor. Pair with cream cheese frosting or a simple glaze for serving.
