  • 1 package 1 (8 oz) package cream cheese, softened Use low-fat cream cheese or Neufchâtel for a lighter version.
  • 1/2 cup 1/2 cup butter, softened
  • 1 1 egg
  • 1 teaspoon 1 teaspoon vanilla extract
  • 1 box 1 box yellow cake mix Can substitute with vanilla or any flavored cake mix.
  • to taste cup powdered sugar (for dusting) Dust before baking.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat together the softened cream cheese and butter until smooth.
  3. Blend in the egg and vanilla extract until well combined.
  4. Gradually fold in the yellow cake mix until fully incorporated.
  5. Using a cookie scoop or tablespoon, drop spoonfuls of dough onto a lined cookie sheet, leaving space between each one.
  6. Sprinkle a generous amount of powdered sugar on top before baking.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Let them sit on the cookie sheet for a couple of minutes, then transfer to a wire rack to cool.

Notes

For extra special cookies, chill the dough for half an hour before baking. You can also stir in white chocolate chips, festive sprinkles, or peppermint extract for variations. Store leftover cookies in an airtight container for up to a week, and separate layers with parchment paper.
