Preparation
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9-inch round cake pan.
- In a bowl, combine the flour, baking powder, and salt. Whisk to mix.
- In a large mixing bowl, beat the softened butter and granulated sugar until fluffy, about 3-5 minutes.
- Add the eggs one at a time, followed by the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with almond milk. Fold in the chopped mandarin pieces.
Baking
- Pour the batter into the prepared cake pan and bake for 30-35 minutes or until a toothpick comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack. Dust with powdered sugar if desired.
Notes
Add a teaspoon of almond extract for extra flavor. Store leftovers in an airtight container for up to 3 days.
