  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 3 large eggs
  • 1 cup almond milk (or any milk you prefer)
  • 1 cup mandarins, peeled and chopped (fresh or canned)
  • 2 tsps baking powder
  • 1 tsp vanilla extract
  • a pinch salt
  • Optional: Powdered sugar for dusting

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9-inch round cake pan.
  3. In a bowl, combine the flour, baking powder, and salt. Whisk to mix.
  4. In a large mixing bowl, beat the softened butter and granulated sugar until fluffy, about 3-5 minutes.
  5. Add the eggs one at a time, followed by the vanilla extract.
  6. Gradually add the dry ingredients to the butter mixture, alternating with almond milk. Fold in the chopped mandarin pieces.
Baking
  1. Pour the batter into the prepared cake pan and bake for 30-35 minutes or until a toothpick comes out clean.
  2. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack. Dust with powdered sugar if desired.

Notes

Add a teaspoon of almond extract for extra flavor. Store leftovers in an airtight container for up to 3 days.
