Preparation
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the flour, baking powder, salt, cinnamon, and nutmeg. Whisk until evenly mixed.
- In another bowl, mix the melted butter, sugar, applesauce, orange juice, and orange peel. If desired, stir in the bourbon.
Mixing
- Gradually add the wet mixture to the dry ingredients, folding gently to combine.
- Gently fold in the mixed dried fruits and nuts. Optionally add diced apples or pears.
Baking
- Pour the mixture into a greased loaf pan (or two) and smooth the top.
- Bake for 60-70 minutes, or until a toothpick comes out clean.
- Let the cake cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
Notes
This cake can be wrapped tightly in plastic wrap and stored for up to a month. For drier cake, skip the bourbon. Soaking dried fruits in bourbon overnight enhances flavor.
