  • 2 lbs beef roast (or your protein of choice) Can substitute with chicken, pork, or plant-based protein.
  • 1 cup diced carrots
  • 1 cup diced potatoes
  • 1 cup diced onions
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp salt More to taste.
  • ½ tsp black pepper
  • 2 tbsp olive oil

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C).
  2. In a large oven-safe pot, heat the olive oil over medium-high heat.
  3. Add the beef roast and sear it on all sides until beautifully browned (about 4-5 minutes per side).
  4. Toss in the diced onions and minced garlic to the pot and sauté for a couple of minutes until soft and fragrant.
  5. Add the diced carrots and potatoes to the pot. Pour in the beef broth, thyme, salt, and pepper. Stir gently to combine.
Cooking
  1. Cover the pot with a lid and bake in the preheated oven for about 3 hours.
  2. After three hours, check the roast for tenderness. If not easily shredded with a fork, allow it to cook for another 30 minutes.
Serving
  1. Remove the pot from the oven and let it rest for about 10 minutes before serving.
  2. Ladle out generous portions onto plates, ensuring everyone gets their share of vegetables.

Notes

Searing the beef roast is crucial to lock in the juices. Feel free to get creative with seasonal vegetables. You can prepare the dish a day ahead and reheat gently before serving for a stress-free holiday meal.
