Ingredients
  

For the Cherry Mixture
  • 1 jar 10 ounces maraschino cherries, with stems Drained and patted dry
  • 2 cups chopped pecans (or walnuts if you prefer) For mixing into the cream cheese
  • 8 ounces cream cheese, softened Main binding agent
  • 1 teaspoon vanilla extract For flavoring
  • 2 cups powdered sugar For sweetness and texture
For Chocolate Coating
  • 1.5 cups semi-sweet chocolate chips For coating the cherry balls
  • 1 tablespoon shortening To smooth the chocolate

Method
 

Preparation
  1. Start by carefully draining the maraschino cherries and patting them dry with paper towels.
  2. In a mixing bowl, combine the softened cream cheese and vanilla extract. Mix until smooth.
  3. Gradually add the powdered sugar, mixing until well combined.
  4. Stir in the chopped pecans (or walnuts) until everything is coated nicely.
Forming the Balls
  1. Take a tablespoon of the mixture and enrobe each cherry completely. Place on a parchment-lined tray.
  2. Repeat until all cherries are covered.
Chilling and Coating
  1. Chill the tray in the freezer for about 30 minutes.
  2. Melt the chocolate chips and shortening together in a microwave-safe bowl, heating in 30-second intervals, and stirring until smooth.
  3. Dip each cherry ball in the melted chocolate and tap to remove excess.
  4. Return to the parchment-lined tray and let them set in the fridge until the chocolate is firm.

Notes

These treats can be made a few days in advance and stored in an airtight container in the fridge. For decoration, sprinkle with leftover chopped pecans on top.
