  • 1.75 cups all-purpose flour
  • 2 cups granulated sugar
  • 0.75 cups unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
Wet Ingredients
  • 2 large eggs
  • 1 cup whole milk
  • 0.5 cups vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cup boiling water

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add in the eggs, milk, vegetable oil, and vanilla extract to your dry mix. Beat the mixture on medium speed for about two minutes until everything is combined.
  4. Carefully stir in the boiling water until well mixed.
Baking
  1. Pour the batter evenly into two greased 9-inch round cake pans.
  2. Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
Cooling and Frosting
  1. Once baked, let your cakes cool in their pans for about 10 minutes, then transfer them to wire racks to cool completely.
  2. Frost with your favorite chocolate frosting.

Notes

For extra flavor, you can add a dash of espresso powder to the frosting. To serve, dust the top with powdered sugar or fresh berries.
