Ingredients
  

Cake Layers
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1.75 cups unsweetened cocoa powder for that deep chocolate flavor!
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 0.5 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
Filling
  • 1 cup heavy whipping cream
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2 teaspoons vanilla extract
Ganache Topping
  • 1 cup heavy cream
  • 8 oz semi-sweet chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, oil, and vanilla. Mix on medium speed for about 2 minutes until blended.
  4. Carefully stir in the boiling water.
Baking
  1. Pour the batter evenly into the prepared pans. Bake for 30-35 minutes or until a toothpick comes out clean.
  2. Cool on wire racks for 10 minutes, then remove from pans to cool completely.
Filling Preparation
  1. Beat the cream cheese in a mixing bowl until smooth. Gradually add the powdered sugar and vanilla extract.
  2. In another bowl, whip the cream until stiff peaks form. Fold it into the cream cheese mixture.
Assembling the Cake
  1. Once the cakes are cool, place one layer on a serving plate. Spread half of the filling on top, then add the second cake layer.
  2. Top with the remaining cream filling.
Ganache Preparation
  1. Heat the heavy cream until it just starts to simmer, then pour it over the chocolate chips in a bowl.
  2. Let it sit for about 5 minutes, then stir until smooth. Pour it over the assembled cake, allowing it to drizzle down the sides.
Chilling and Serving
  1. Let the cake set in the refrigerator for at least 1 hour.
  2. Slice and serve.

Notes

Make sure your eggs and cream cheese are at room temperature for a smooth filling. You can prepare the cakes a day in advance. Don't skimp on the ganache, it's the pièce de résistance.
