Preparation
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, milk, oil, and vanilla. Mix on medium speed for about 2 minutes until blended.
- Carefully stir in the boiling water.
Baking
- Pour the batter evenly into the prepared pans. Bake for 30-35 minutes or until a toothpick comes out clean.
- Cool on wire racks for 10 minutes, then remove from pans to cool completely.
Filling Preparation
- Beat the cream cheese in a mixing bowl until smooth. Gradually add the powdered sugar and vanilla extract.
- In another bowl, whip the cream until stiff peaks form. Fold it into the cream cheese mixture.
Assembling the Cake
- Once the cakes are cool, place one layer on a serving plate. Spread half of the filling on top, then add the second cake layer.
- Top with the remaining cream filling.
Ganache Preparation
- Heat the heavy cream until it just starts to simmer, then pour it over the chocolate chips in a bowl.
- Let it sit for about 5 minutes, then stir until smooth. Pour it over the assembled cake, allowing it to drizzle down the sides.
Chilling and Serving
- Let the cake set in the refrigerator for at least 1 hour.
- Slice and serve.
Notes
Make sure your eggs and cream cheese are at room temperature for a smooth filling. You can prepare the cakes a day in advance. Don't skimp on the ganache, it's the pièce de résistance.
