  • 1 ¾ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ tsp baking soda
  • 1 ½ tsp baking powder
  • ½ tsp salt
Wet Ingredients
  • 1 cup mayonnaise This adds moisture and richness.
  • 1 cup water
  • 2 tsp vanilla extract
Optional Topping
  • Chocolate frosting Optional, but delicious!

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt until well combined.
  3. Add in the mayonnaise, water, and vanilla extract, and mix until the batter is smooth.
Cooking
  1. Pour your batter into a greased 9x13 inch baking dish.
  2. Pop it in the oven and let it bake for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.
Cooling and Topping
  1. Once baked, let the cake cool in the pan for about 10 minutes.
  2. Transfer the cake onto a wire rack to cool completely, then frost with chocolate frosting if desired.

Notes

You can use vegan mayonnaise for a dairy-free option. Add chocolate chips or nuts for extra flavor. Store leftover cake in an airtight container at room temperature for 3-4 days or freeze in slices.
