Ingredients
  

For the chocolate cake
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg
  • ½ cup milk
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup boiling water This helps make the cake super moist.
For the ice cream layer
  • 1 quart chocolate ice cream You can use your favorite flavor.
  • to taste whipped cream Optional for topping.
  • to taste chocolate shavings or sprinkles For garnish.

Method
 

Make the Cake
  1. Preheat your oven to 350°F (175°C). Grease and flour a round 8-inch cake pan.
  2. In a mixing bowl, combine the sugar, flour, cocoa powder, baking powder, baking soda, and salt.
  3. Add in the egg, milk, oil, and vanilla. Mix until just combined.
  4. Stir in the boiling water. Pour the batter into your prepared cake pan and bake for 30-35 minutes or until a toothpick comes out clean. Let it cool completely.
Assemble the Cake
  1. Once cooled, slice the cake in half horizontally.
  2. Place one layer back in the pan, and scoop on a generous layer of the chocolate ice cream.
  3. Add the second cake layer on top of the ice cream and press down gently to secure it.
  4. Pop your assembled cake in the freezer for about 2-3 hours for the ice cream to firm up.
Decorate and Serve
  1. After the icing firm up, top with whipped cream, chocolate shavings, or sprinkles.
  2. Slice, serve, and enjoy the smiles from your loved ones!

Notes

You can swap the chocolate ice cream for vanilla or a fruity flavor. Drizzle chocolate syrup or sprinkle crushed cookies for added glam. Dipping your knife in hot water before slicing helps make clean cuts.
