Method
Make the Cake
- Preheat your oven to 350°F (175°C). Grease and flour a round 8-inch cake pan.
- In a mixing bowl, combine the sugar, flour, cocoa powder, baking powder, baking soda, and salt.
- Add in the egg, milk, oil, and vanilla. Mix until just combined.
- Stir in the boiling water. Pour the batter into your prepared cake pan and bake for 30-35 minutes or until a toothpick comes out clean. Let it cool completely.
Assemble the Cake
- Once cooled, slice the cake in half horizontally.
- Place one layer back in the pan, and scoop on a generous layer of the chocolate ice cream.
- Add the second cake layer on top of the ice cream and press down gently to secure it.
- Pop your assembled cake in the freezer for about 2-3 hours for the ice cream to firm up.
Decorate and Serve
- After the icing firm up, top with whipped cream, chocolate shavings, or sprinkles.

Notes
You can swap the chocolate ice cream for vanilla or a fruity flavor. Drizzle chocolate syrup or sprinkle crushed cookies for added glam. Dipping your knife in hot water before slicing helps make clean cuts.
