Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the cocoa powder, sugar, flour, baking powder, baking soda, and salt until well combined.
- Add in the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Stir until everything is nicely blended.
- Carefully stir in the boiling water to the mixture.
Baking
- Pour the batter into two greased and floured round cake pans.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Cooling and Frosting
- Allow your cakes to cool in the pans for about 10 minutes before transferring them to a wire rack.
- Once completely cool, frost with your favorite chocolate frosting or buttercream.
Notes
If you don’t have buttermilk, substitute with regular milk plus a tablespoon of vinegar or lemon juice. The cake stays moist for days stored in an airtight container.
