Ingredients
  

Dry Ingredients
  • 1 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 ¾ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
Wet Ingredients
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water This will make the cake fudgy.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the cocoa powder, sugar, flour, baking powder, baking soda, and salt until well combined.
  3. Add in the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Stir until everything is nicely blended.
  4. Carefully stir in the boiling water to the mixture.
Baking
  1. Pour the batter into two greased and floured round cake pans.
  2. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Cooling and Frosting
  1. Allow your cakes to cool in the pans for about 10 minutes before transferring them to a wire rack.
  2. Once completely cool, frost with your favorite chocolate frosting or buttercream.

Notes

If you don’t have buttermilk, substitute with regular milk plus a tablespoon of vinegar or lemon juice. The cake stays moist for days stored in an airtight container.
