  • ¼ cup coconut oil Helps the chocolate melt smoothly.

Method

Preparation
  1. In a small saucepan over medium heat, combine mixed berries, sugar, and lemon juice. Cook while gently smashing the berries for about 5-7 minutes until it resembles a chunky sauce.
  2. Strain the berry mixture through a fine-mesh sieve into a bowl to remove seeds and achieve a smooth texture. Cool for about 10 minutes.
  3. Pour the strained berry mixture into a silicone mold or mini muffin tin and refrigerate for about an hour, or until set.
Melting Chocolate and Coating
  1. In a microwave-safe bowl, combine chocolate chips and coconut oil. Heat in microwave in 30-second increments, stirring in between, until melted and smooth.
  2. Gently remove the set gelées from the mold. Dip each gelée into the melted chocolate using a fork, tapping off any excess. Place them on a parchment-lined tray.
  3. Allow the chocolate to set at room temperature, or refrigerate for about 30 minutes to speed up the process.
Serving
  1. Serve your beautiful Chocolate-Enrobed Berry Gelée Delights and enjoy!

Notes
