Preparation
- Preheat your oven to 350°F (175°C). Grease or line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet mixture, mixing until just combined.
- Stir in the chocolate chips.
- In a separate bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Assembly
- Scoop a tablespoon of cookie dough and flatten in your hand. Place a small dollop of cheesecake filling in the center, then fold the dough over to encase the filling completely.
- Roll it into a ball and place it on the baking sheet. Repeat with the remaining dough.
Baking
- Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
For chewier cookies, chill the dough in the fridge for about 30 minutes before baking. You can substitute Greek yogurt for cream cheese if desired.
