Ingredients
  

For the Cookie Dough
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chocolate chips
For the Cheesecake Filling
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease or line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet mixture, mixing until just combined.
  5. Stir in the chocolate chips.
  6. In a separate bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Assembly
  1. Scoop a tablespoon of cookie dough and flatten in your hand. Place a small dollop of cheesecake filling in the center, then fold the dough over to encase the filling completely.
  2. Roll it into a ball and place it on the baking sheet. Repeat with the remaining dough.
Baking
  1. Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

For chewier cookies, chill the dough in the fridge for about 30 minutes before baking. You can substitute Greek yogurt for cream cheese if desired.
