Method
 

Preparation
  1. In a medium bowl, combine your chocolate chips and heavy cream. Microwave in 30-second intervals, stirring in between, until you have a smooth mixture.
  2. Fold in the dried cherries and vanilla extract. Let it cool for a couple of minutes.
Rolling Truffles
  1. Once cool enough to handle, scoop out small amounts and roll them into bite-sized balls.
  2. Roll each truffle in the sweetened flaked coconut.
Chilling
  1. Place your truffles on a baking sheet and chill them in the fridge for at least 30 minutes.
Serving
  1. Once chilled, serve them in mini cupcake liners for an elegant presentation.
  2. Sprinkle some extra coconut for a snowy effect.
