Preparation
- In a medium bowl, combine your chocolate chips and heavy cream. Microwave in 30-second intervals, stirring in between, until you have a smooth mixture.
- Fold in the dried cherries and vanilla extract. Let it cool for a couple of minutes.
Rolling Truffles
- Once cool enough to handle, scoop out small amounts and roll them into bite-sized balls.
- Roll each truffle in the sweetened flaked coconut.
Chilling
- Place your truffles on a baking sheet and chill them in the fridge for at least 30 minutes.
Serving
- Once chilled, serve them in mini cupcake liners for an elegant presentation.
- Sprinkle some extra coconut for a snowy effect.
