Preparation
- In a bowl, combine the chopped parsley, cilantro, minced garlic, red wine vinegar, red pepper flakes, and olive oil. Mix until blended and season with salt and pepper.
- Pat the shrimp dry with a paper towel.
Cooking
- Heat a large skillet over medium-high heat and add a small drizzle of olive oil.
- Add the shrimp to the pan in a single layer. Cook for 2-3 minutes until they are white and opaque, then flip and cook for another 2-3 minutes until completely cooked through.
Mix and Serve
- Remove the skillet from heat and toss the cooked shrimp in the chimichurri sauce until coated.
- Serve the Chimichurri Shrimp with lemon wedges on the side and squeeze fresh lemon juice over the shrimp before enjoying.
Notes
For an adventurous twist, add diced avocado before serving. If your chimichurri sauce looks a little lumpy, that's normal from the herbs. Pair the dish with a simple side salad or fluffy rice for a complete meal.
