Ingredients
  

For the Flank Steak
  • 1.5 pounds flank steak
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
For the Chimichurri Sauce
  • 1 cup fresh parsley, chopped
  • 0.5 cup olive oil
  • 0.25 cup red wine vinegar
  • 2-3 cloves garlic, minced
  • 0.5 teaspoon red pepper flakes adjust to taste
  • Salt and pepper, to taste

Method
 

Preparation
  1. In a medium bowl, combine the chopped parsley, minced garlic, red wine vinegar, red pepper flakes, and salt and pepper for the chimichurri sauce.
  2. Slowly whisk in the olive oil until the sauce is combined.
  3. Season the flank steak generously with salt and pepper on both sides.
Cooking
  1. In a large skillet or grill pan, add the olive oil and heat over medium-high heat.
  2. Once the pan is sizzling, add the flank steak and cook for about 4-5 minutes on each side for medium-rare.
  3. Transfer the steak to a cutting board and let it rest for 5 minutes.
  4. Slice the flank steak against the grain for maximum tenderness.
  5. Drizzle the chimichurri sauce generously over the sliced steak and serve it hot.

Notes

If you're short on time, you can prep the chimichurri sauce a day ahead. If flank steak isn't available, sirloin or skirt steak can be used with adjusted cooking times.
