  • 1 cup canned pineapple chunks (in juice, not syrup)
  • 1 tablespoon chili paste (or your favorite hot sauce)
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 1 tablespoon honey (or agave syrup for a vegan option)

Preparation
  1. In a mixing bowl, combine the pineapple chunks (juice included), chili paste, soy sauce, rice vinegar, garlic powder, ground ginger, and honey.
  2. Blend this mixture using a blender until smooth. If you’d rather have a chunkier texture, feel free to pulse just a few times!
Cooking
  1. Pour the blended sauce into a small saucepan and place it over medium heat. Bring it to a simmer.
  2. Once it starts to bubble, add the cornstarch mixed with water to the saucepan, and stir to combine.
  3. Keep stirring for about 2-3 minutes until the sauce thickens slightly. It should coat the back of a spoon without running off!
Taste Testing
  1. Before you pour it over everything in sight, give it a taste! Adjust with more chili paste for heat or a splash of honey for sweetness as desired.

Notes

Experiment with different hot sauces or chili pastes to find your perfect heat level. If your sauce looks a little lumpy, just give it a good stir, and it’ll be perfect. This sauce can be drizzled on tacos, grilled veggies, or used as a dipping sauce for spring rolls.
