Ingredients

  • 1 can chickpeas, drained and rinsed 15 oz can
  • 1 clove garlic, minced or more if you want to ward off those pesky vampires!
  • 2 tablespoons tahini
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed makes a huge difference
  • ½ teaspoon ground cumin
  • Salt and pepper to taste
  • Paprika for garnish for a pop of color

Method
 

Preparation
  1. In a food processor, combine the drained chickpeas, minced garlic, tahini, olive oil, lemon juice, and ground cumin.
  2. Process everything until smooth. Adjust the consistency by adding a splash of water if it’s too thick.
  3. Taste and add salt and pepper as needed. A dash more lemon juice won’t hurt either.
  4. Transfer the dip to a serving bowl, sprinkle with paprika, and drizzle with a touch more olive oil.
  5. Serve with your favorite dippers.

Notes

If short on time, canned chickpeas work wonderfully. This dip is all about balance; if it tastes too 'earthy,' a little more lemon juice can brighten it up. For extra flavor, add roasted red pepper or herbs like cilantro.
