- In a food processor, combine the drained chickpeas, minced garlic, tahini, olive oil, lemon juice, and ground cumin.
- Process everything until smooth. Adjust the consistency by adding a splash of water if it’s too thick.
- Taste and add salt and pepper as needed. A dash more lemon juice won’t hurt either.
- Transfer the dip to a serving bowl, sprinkle with paprika, and drizzle with a touch more olive oil.
- Serve with your favorite dippers.

If short on time, canned chickpeas work wonderfully. This dip is all about balance; if it tastes too 'earthy,' a little more lemon juice can brighten it up. For extra flavor, add roasted red pepper or herbs like cilantro.
