Noodles
  • 8 ounces lo mein noodles or any pasta you have on hand
Chicken
  • 1 pound boneless, skinless chicken breast, thinly sliced
Vegetables
  • 2 cups mixed vegetables (carrots, bell peppers, broccoli; you name it!) feel free to use leftovers from the fridge
  • 2 tablespoons fresh ginger, minced fresh is best!
  • 3 cloves garlic, minced
Sauces and Oils
  • 1 tablespoon vegetable oil
  • 4 tablespoons soy sauce low-sodium if you prefer
  • 2 tablespoons oyster sauce or more soy sauce, if you’d like
  • 1 tablespoon sesame oil plus more for drizzling
Seasoning
  • Salt and pepper, to taste
Garnish
  • Green onions for garnish for added color

Preparation
  1. Cook the lo mein noodles according to package instructions. Drain and set aside. Toss with a drizzle of sesame oil to prevent sticking.
Cooking Chicken
  1. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced chicken and season with a pinch of salt and pepper. Cook for about 5-7 minutes until the chicken is golden and cooked through.
Adding Vegetables
  1. Toss in the mixed vegetables, ginger, and garlic. Stir and cook until the veggies are vibrant yet tender, about 3-4 minutes.
Combining Ingredients
  1. Pour in the soy sauce and oyster sauce. Add the cooked noodles and toss gently to combine. Cook for another 2-3 minutes to meld the flavors.
Final Touches
  1. Drizzle more sesame oil over the top and toss. Garnish with green onions before serving.

Notes

Don’t sweat the cooking time; just keep an eye on your chicken to avoid overcooking. Feel free to experiment with flavors by adding crushed red pepper or chili oil for heat. Leftovers can be stored in an airtight container in the fridge for 3-4 days.
