Ingredients

Main Ingredients
  • 2 large chicken breasts, cooked and shredded rotisserie chicken works great!
  • 2 ripe avocados, diced
  • 1 cup fresh cilantro, chopped or your favorite herb!
  • 1 cup fresh parsley, chopped
  • 1/2 cup red onion, finely chopped
  • 1 tablespoon lime juice because life needs a zesty kick
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1 cup shredded cheese cheddar or Monterey Jack—pick your favorite!
  • Optional add-ins: corn, black beans, or your preferred salsa for a taste of fiesta!

Method

Preparation
  1. If you're not using rotisserie chicken, season the chicken breasts with salt and pepper, sear on a skillet until fully cooked, then shred them into bite-sized pieces.
  2. In a large bowl, combine the chicken, diced avocados, chopped cilantro, parsley, red onion, and lime juice. Gently fold everything together without mashing the avocados.
  3. Lay a tortilla flat, scoop a hearty amount of the filling onto the center, and sprinkle your choice of cheese on top. Wrap it up burrito-style, folding in the sides and rolling tightly from the bottom up.
  4. Heat a bit of oil in a skillet over medium heat, and toast the wrapped burritos for about two minutes on each side, until golden.
  5. Slice the burritos in half and serve them with salsa, sour cream, or guacamole on the side.

Notes

Make-ahead magic: Wrap tightly in foil and store in the freezer. For serving, just pop one in the microwave or toaster oven when needed. Customize by substituting cilantro with basil or dill, and add hot sauce for extra kick. Sprinkle additional fresh herbs before serving for a beautiful presentation.
