Ingredients
  

For the crust
  • 1.5 cups crushed graham crackers
  • 0.5 cup chopped pecans
  • 0.5 cup unsalted butter, melted
  • 2 tablespoons granulated sugar
For the cheesecake layer
  • 16 ounces cream cheese, softened 2 packages (8 ounces each)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping (Cool Whip or similar)
For the cherry layer
  • 1 can cherry pie filling (21 ounces)
For topping
  • to taste extra chopped pecans
  • to taste whipped cream (optional)

Method
 

Create the Crust
  1. In a medium bowl, combine crushed graham crackers, chopped pecans, melted butter, and granulated sugar. Stir until everything is well blended.
  2. Press this mixture firmly into the bottom of a 9x13 inch baking dish.
Prepare the Cheesecake Layer
  1. In a large mixing bowl, beat the softened cream cheese until it's smooth and creamy.
  2. Add in the powdered sugar and vanilla extract. Continue to beat until thoroughly combined.
  3. Gently fold in the whipped topping until fully integrated.
Layer It Up
  1. Pour the cheesecake mixture over the prepared crust and spread it evenly.
  2. Spoon the cherry pie filling over the cheesecake layer.
Chill and Serve
  1. Refrigerate the cheesecake lush for at least 4 hours (or overnight for the best taste).
  2. Before serving, sprinkle extra chopped pecans and whipped cream if desired.

Notes

You can customize the fruit topping; blueberries or strawberries work well. No mixer? Use a sturdy whisk instead.
