Ingredients
  

For the Truffle Filling
  • 1 cup chopped cherries (fresh or frozen) No canned cherries.
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tablespoon cherry juice
  • 1 cup crushed peanuts For extra crunch.
  • to taste sea salt A sprinkle for flavor.
For the Chocolate Coating
  • 2 cups semi-sweet chocolate chips

Method
 

Preparation
  1. If you're using fresh cherries, remove the pits and chop them. If using frozen, thaw and drain well.
  2. In a mixing bowl, combine cream cheese, powdered sugar, chopped cherries, and cherry juice. Mix until smooth and creamy.
  3. Cover the mixture and refrigerate for 30 minutes.
Shaping the Truffles
  1. Once chilled, scoop about a tablespoon of mixture and roll into a ball. Place on a parchment-lined baking sheet.
Chocolate Coating
  1. Melt chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  2. Dip each truffle into melted chocolate and coat evenly. Use a fork to lift and let excess chocolate drip off.
  3. Roll truffles into crushed peanuts and sprinkle with sea salt.
Final Chill
  1. Place truffles back on the baking sheet and chill for another 30 minutes until chocolate sets.

Notes

Add a splash of cherry liqueur for an adult twist. Try using different coatings like grated coconut or crushed graham crackers.
