Preparation
- In a bowl, combine the peanut butter, powdered sugar, cherry preserves, and vanilla extract. Stir until smooth and creamy.
- Cover the bowl and chill in the fridge for about 30 minutes to firm the mixture.
Rolling
- After chilling, scoop out a tablespoon of the mixture and roll it into a ball. Place on a baking sheet lined with parchment paper.
Chocolate Coating
- In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals until melted, stirring between each.
- Dunk each truffle in the melted chocolate, ensuring it's completely coated.
Final Chill
- Place the chocolate-covered truffles back on the baking sheet and return them to the fridge until the chocolate hardens, about 15 minutes.
Serving
- Once set, serve the truffles on a fun platter and enjoy!
Notes
You can substitute cherry preserves for raspberry or strawberry for different flavors. Add crushed nuts or sea salt on top of the chocolate before it hardens for extra flair.
