Ingredients
  

Dry Ingredients
  • 1 ¾ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
Wet Ingredients
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
Add-ins
  • 1 cup fresh or canned cherries (pitted and halved) Use fresh if in season, otherwise canned drained cherries are fine.
  • ½ cup chocolate chips Optional for extra indulgence.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add in the eggs, milk, vegetable oil, and vanilla extract. Beat on medium speed until smooth, then stir in the boiling water carefully.
  4. Gently fold in the cherries and chocolate chips (if used).
Baking
  1. Pour the batter into a greased and floured cake pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  3. Serve as is or dust with powdered sugar for an elegant touch.

Notes

Store the cake in an airtight container at room temperature for up to three days. You can use a gluten-free flour blend if preferred. Add chocolate ganache or serve with whipped cream or ice cream for variation.
