Ingredients
  

For the crust
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened Let it sit at room temperature
For the filling
  • 1 can cherry pie filling (21 ounces) The easier, the better!
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch To thicken the filling
For the crumble topping
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon cinnamon
  • 1/4 cup unsalted butter, melted

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the flour, sugar, and salt. Mix in the softened butter until the mixture resembles coarse crumbs. Press this mixture into the bottom of a greased 9x13-inch baking pan.
  3. In another bowl, mix the cherry pie filling with the vanilla extract and cornstarch.
  4. Pour the cherry mixture over the crust and spread it evenly.
  5. In a separate bowl, combine oats, brown sugar, flour, cinnamon, and melted butter. Mix until crumbly and sprinkle over the cherry layer.
  6. Bake in the preheated oven for about 30 minutes or until golden brown and bubbly.
  7. Let the pan cool completely, then cut into bars and serve.

Notes

These bars are a hit with picky eaters and can be made with other fruits like blueberries or apple pie filling for variety. Store leftovers in an airtight container in the fridge for up to a week or freeze for later enjoyment.
