  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar (plus extra for rolling) Use additional for rolling after baking.
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract This is key for flavor!
  • 2 cups all-purpose flour
  • 1/2 cup finely chopped cherries (dried works best)
  • 1/2 cup chopped nuts (almonds or pecans) Either almonds or pecans will work well.
  • 1 pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. Cream the butter and powdered sugar in a mixing bowl until light and fluffy.
  3. Add vanilla and almond extracts and mix well.
  4. Gradually mix in the flour and pinch of salt until just combined.
  5. Fold in the chopped cherries and nuts until evenly distributed.
  6. Scoop tablespoon-sized portions of dough and roll them into balls, placing them on the prepared baking sheet about 2 inches apart.
Baking
  1. Bake for 12 to 15 minutes, or until the bottoms are lightly golden.
  2. Allow to cool slightly, then roll the warm cookies in powdered sugar.
  3. Allow to cool completely on a wire rack.

Notes

Chill the dough for 30 minutes to prevent spreading. You can swap nuts or use fresh cherries for a different taste. Add food coloring for a festive touch!
