Preparation
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- Cream the butter and powdered sugar in a mixing bowl until light and fluffy.
- Add vanilla and almond extracts and mix well.
- Gradually mix in the flour and pinch of salt until just combined.
- Fold in the chopped cherries and nuts until evenly distributed.
- Scoop tablespoon-sized portions of dough and roll them into balls, placing them on the prepared baking sheet about 2 inches apart.
Baking
- Bake for 12 to 15 minutes, or until the bottoms are lightly golden.
- Allow to cool slightly, then roll the warm cookies in powdered sugar.
- Allow to cool completely on a wire rack.
Notes
Chill the dough for 30 minutes to prevent spreading. You can swap nuts or use fresh cherries for a different taste. Add food coloring for a festive touch!
