Cheesy White Pizza Grilled Sandwiches

Ingredients
  

For the Sandwich Filling
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • ½ cup ricotta cheese
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • cup grated Parmesan cheese divided
For the Sandwich Assembly
  • 8 slices favorite bread (sourdough or whole wheat)
  • Butter or olive oil for grilling to taste

Method
 

Preparation
  1. In a bowl, combine the cream cheese, mozzarella, ricotta, minced garlic, oregano, basil, and half of the Parmesan cheese. Mix until everything is well incorporated.
  2. Take your slices of bread and spread a generous amount of the cheese mixture onto four of the slices.
  3. Place the remaining slices of bread on top to create sandwiches.
Grilling
  1. Heat a large skillet over medium heat and add a little butter or olive oil.
  2. Once hot, carefully place the sandwiches in the skillet and cook them for about 3-4 minutes on each side until they are golden brown and the cheese is melting.
  3. When both sides are browned, sprinkle the remaining Parmesan cheese on top of the sandwiches in the skillet, cover for a minute to let it melt.

Notes

Consider adding spinach or sautéed mushrooms to the cheese mixture for extra flavor. Cut the sandwiches into triangles for easy sharing.
