Preparation
- Preheat the oven to 400°F (200°C).
- In a large bowl, add the halved baby potatoes and drizzle them with olive oil. Sprinkle with ranch seasoning mix, salt, and pepper. Toss everything together until the potatoes are fully coated.
- Spread the potatoes evenly on a baking sheet.
Cooking
- Roast in the preheated oven for 20 minutes.
- After 20 minutes, shake the baking sheet to ensure they cook evenly.
- Sprinkle the shredded cheddar cheese over the top of the potatoes and return to the oven for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with freshly chopped green onions.
Notes
For a variation, add cooked bacon bits before serving or experiment with different cheese types like pepper jack for a spicy kick. Don't skip the green onions for a fresh bite!
