  • 2 pounds baby potatoes, halved
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese The cheesier, the better!
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh green onions, chopped For garnish

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, add the halved baby potatoes and drizzle them with olive oil. Sprinkle with ranch seasoning mix, salt, and pepper. Toss everything together until the potatoes are fully coated.
  3. Spread the potatoes evenly on a baking sheet.
Cooking
  1. Roast in the preheated oven for 20 minutes.
  2. After 20 minutes, shake the baking sheet to ensure they cook evenly.
  3. Sprinkle the shredded cheddar cheese over the top of the potatoes and return to the oven for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  4. Remove from the oven and garnish with freshly chopped green onions.

Notes

For a variation, add cooked bacon bits before serving or experiment with different cheese types like pepper jack for a spicy kick. Don't skip the green onions for a fresh bite!
