Ingredients
  

Pastry and Filling
  • 1 sheet puff pastry (thawed)
  • 1 cup artichoke hearts (canned or frozen, drained and chopped)
  • 1 cup shredded cheese (mozzarella, feta, or your favorite blend)
  • 1/4 cup cream cheese (softened)
  • 1 tablespoon fresh herbs (like basil, parsley, or dill – chopped)
  • 1 egg to wash the pastry
  • Salt and pepper (to taste)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine chopped artichokes, shredded cheese, cream cheese, and fresh herbs. Season with salt and pepper and mix well.
  3. On a lightly floured surface, roll out the puff pastry until about 1/8 inch thick. Line a baking sheet with parchment paper.
  4. Cut the puff pastry into squares or rectangles and place a spoonful of the filling in the center of each piece.
  5. Fold the pastry over to create a pocket and pinch the edges to seal. Crimp edges with a fork if desired.
  6. Beat the egg and brush it over the tops of the pastries.
  7. Bake in the preheated oven for 15-20 minutes, or until golden brown.
  8. Let them cool slightly before serving; pair with a dipping sauce if desired.

Notes

You can prep the filling the night before and store it in the fridge. Don't overstuff the pastries to prevent mess.
