Ingredients
  

For the Pastry
  • 1 sheet puff pastry (thawed) Make sure to thaw in advance.
  • 1 egg egg (for egg wash) Beaten for brushing.
For the Filling
  • 1 cup artichoke hearts (canned, drained, and chopped) Use fully drained hearts for best texture.
  • 1 cup cream cheese (softened) Let it sit out to soften before mixing.
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons fresh herbs (like oregano or basil), chopped Feel free to mix herbs.
  • 1 clove garlic (minced) Freshly minced for best flavor.
  • to taste Salt and black pepper Adjust according to your taste.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine softened cream cheese, artichoke hearts, mozzarella, minced garlic, chopped herbs, salt, and pepper. Mix until well combined.
  3. On a lightly floured surface, roll out the puff pastry sheet.
  4. Cut the pastry into squares about 3 inches wide.
  5. Place a spoonful of the cheesy filling in the center of each square. Fold corners over the filling and seal well.
  6. Beat the egg and apply a light egg wash over each pastry.
Baking
  1. Place the pastries on a parchment-lined baking sheet and bake for about 20 minutes, or until golden brown.
  2. Allow to cool slightly before serving warm, optionally garnished with extra herbs.

Notes

Feel free to substitute mozzarella with feta or goat cheese. Prepare ahead and freeze before baking for later use.
