  • 3-4 medium-sized medium-sized potatoes The star of our show!
  • 1 cup shredded cheese Use your favorite kind, cheddar recommended.
  • 1 cup sour cream For that creamy goodness.
  • 1/4 cup milk Because why not?
  • 1/2 teaspoon garlic powder Just a pinch of zest.
  • to taste Salt
  • to taste pepper
  • 1/2 cup cooked bacon bits Bacon makes everything better!
  • Green onions For garnish, optional but highly encouraged!

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Scrub potatoes clean, then peel and chop them into bite-sized cubes.
  3. Boil the potato cubes in a pot of salted water for about 15-20 minutes, or until fork-tender.
  4. In a mixing bowl, combine shredded cheese, sour cream, milk, garlic powder, salt, pepper, and half of the bacon bits.
  5. Drain the potatoes and mix them with the cheesy goodness.
  6. Transfer the mixture to a greased baking dish. Top with remaining cheese and bacon bits.
  7. Bake for about 25-30 minutes, or until bubbly and golden brown.
  8. Once out of the oven, sprinkle with chopped green onions before serving.

Notes

For bacon swaps, use cooked ham or omit for vegetarian. Get creative with cheese choices—mozzarella, gouda, or spicy pepper jack are great!
