Ingredients
  

Mashed Potato Mixture
  • 2 cups mashed potatoes Can use leftovers
  • 1 cup shredded cheddar cheese Cheddar makes everything better
  • 1/2 cup grated Parmesan cheese To kick things up a notch
  • 1/4 cup green onions, finely chopped For a bit of freshness
  • 2 large eggs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper To taste
Coating and Baking
  • 1 cup breadcrumbs For added crunch
  • Cooking spray For a golden finish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine your mashed potatoes, shredded cheddar, grated Parmesan, chopped green onions, eggs, garlic powder, onion powder, salt, and pepper. Mix until everything is well combined.
  3. Grab a spoonful of the potato mixture and form it into a small ball (about the size of a golf ball). Roll the ball in breadcrumbs until fully coated.
  4. Place the formed puffs on a baking sheet lined with parchment paper. Give each puff a light spritz with cooking spray.
Baking
  1. Pop the tray in the oven and bake for about 20-25 minutes, or until they’re golden and crispy.
  2. Once they’re out of the oven, let them cool for a few minutes before serving.

Notes

Can use leftover mashed potatoes. Feel free to experiment with different cheeses. If puffs fall apart, gently press to hold together.
