Preparation
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine your mashed potatoes, shredded cheddar, grated Parmesan, chopped green onions, eggs, garlic powder, onion powder, salt, and pepper. Mix until everything is well combined.
- Grab a spoonful of the potato mixture and form it into a small ball (about the size of a golf ball). Roll the ball in breadcrumbs until fully coated.
- Place the formed puffs on a baking sheet lined with parchment paper. Give each puff a light spritz with cooking spray.
Baking
- Pop the tray in the oven and bake for about 20-25 minutes, or until they’re golden and crispy.
- Once they’re out of the oven, let them cool for a few minutes before serving.
Notes
Can use leftover mashed potatoes. Feel free to experiment with different cheeses. If puffs fall apart, gently press to hold together.
