Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the mashed potatoes, shredded cheese, 1/4 cup of bread crumbs, eggs, green onions, and a generous pinch of salt and pepper. Mix well until smooth and fully combined.
  3. Scoop about a tablespoon of the mixture and gently shape it into balls or small puffs.
  4. Roll each puff in the remaining bread crumbs for a crunchy coating.
Baking
  1. Place the puffs on a baking sheet lined with parchment paper, and spritz with cooking spray or drizzle with oil.
  2. Bake for about 20-25 minutes or until golden brown.
Serving
  1. Once done, remove from the oven and let them cool slightly. Serve with your favorite dipping sauce or enjoy them on their own.

Notes

If you have leftover mashed potatoes, this recipe is a perfect way to use them! Experiment with different cheeses such as pepper jack for a spicy twist or gouda for a smokier flavor. You can prepare the puffs a day ahead and keep them in the fridge before baking.
