  • 2 cups cooked rice Brown or white rice can be used.
  • 1 cup broccoli florets, steamed Can be fresh or frozen.
  • 1 can (10.5 oz) cream of chicken soup Feel free to use a healthier version.
  • 1 cup milk Dairy or non-dairy options are available.
  • 2 cups shredded cheddar cheese The more, the merrier!
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: breadcrumbs for topping, a dash of paprika For extra crunch.

Preparation
  1. Preheat your oven to 350°F (175°C) while you tackle the prep work.
  2. In a large bowl, combine the shredded chicken, cooked rice, steamed broccoli, cream of chicken soup, milk, and spices. Mix until everything is evenly coated.
  3. Fold in 1 ½ cups of shredded cheddar cheese.
  4. Transfer the mixture into a greased 9x13 inch casserole dish and spread it out evenly.
  5. Sprinkle the remaining cheese on top. Optionally, add a layer of breadcrumbs.
Baking
  1. Pop it into the oven for about 25-30 minutes, or until bubbly and golden brown.
  2. Serve hot and enjoy as your family devours this comforting masterpiece.

Notes

Feel free to add diced bell peppers or onions for extra flavor. This casserole keeps well as leftovers and can be reheated in the microwave or oven. You can also prepare it a day in advance.
