Preparation
- Preheat your oven to 425°F (220°C).
- In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave on high for about 30 to 60 seconds, stirring until it’s smooth.
- In a separate bowl, whisk together the almond flour, baking powder, garlic powder, Italian seasoning, and salt.
- Add the melted cheese to the dry ingredients and mix well.
- Add the eggs and mix until everything is evenly distributed.
- Form a loaf shape on a baking sheet lined with parchment paper.
- Sprinkle additional cheese on top if desired.
Baking
- Bake for 12-15 minutes or until golden.
Cooling and Serving
- Allow to cool for a few minutes on a wire rack before slicing.
Notes
Optionally, add chopped green onions or cooked bacon bits for extra flavor. Store leftovers wrapped in the fridge for up to three days, or freeze for longer storage.
