Ingredients
  

Main Ingredients
  • 2 cups shredded mozzarella cheese Use fresh mozzarella for best results.
  • 2 oz cream cheese, softened Ensure it's at room temperature for easy mixing.
  • 1 cup almond flour Ground almond meal is a good alternative.
  • 2 large eggs They help bind the dough.
  • 1 tsp baking powder This helps the bread rise.
  • 1 tsp garlic powder Adds flavor.
  • ½ tsp Italian seasoning Feel free to substitute with your favorite herbs.
  • a pinch salt To taste.
  • optional additional cheese for topping Because more cheese is always better!

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave on high for about 30 to 60 seconds, stirring until it’s smooth.
  3. In a separate bowl, whisk together the almond flour, baking powder, garlic powder, Italian seasoning, and salt.
  4. Add the melted cheese to the dry ingredients and mix well.
  5. Add the eggs and mix until everything is evenly distributed.
  6. Form a loaf shape on a baking sheet lined with parchment paper.
  7. Sprinkle additional cheese on top if desired.
Baking
  1. Bake for 12-15 minutes or until golden.
Cooling and Serving
  1. Allow to cool for a few minutes on a wire rack before slicing.

Notes

Optionally, add chopped green onions or cooked bacon bits for extra flavor. Store leftovers wrapped in the fridge for up to three days, or freeze for longer storage.
