  • 1 pound ground beef or turkey if you prefer
  • 1 cup shredded cheese Cheddar is classic, but feel free to get creative with a Mexican blend.
  • 1 tablespoon taco seasoning or your favorite spice mix
  • 8 large flour tortillas
  • 1 can diced tomatoes drained
  • 1 cup sour cream optional for serving

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, brown the ground beef on medium heat until fully cooked. Drain the excess fat.
  3. Stir in the taco seasoning and half of the shredded cheese until everything is well mixed.
  4. Spread about 1/4 cup of the meat mixture down the center of each flour tortilla.
  5. Add the diced tomatoes on top of the meat mixture.
  6. Sprinkle the remaining cheese on top, then gently roll up the tortillas, tucking in the ends.
  7. Place the roll-ups seam side down in a baking dish.
  8. Bake for about 15-20 minutes, or until the cheese is bubbly and golden.
Serving
  1. Serve with a dollop of sour cream on the side for dipping.

Notes

Feel free to add chopped bell peppers or spinach to the beef mixture for extra veggies. Leftover roll-ups can be microwaved for a quick snack.
