Preparation
- Preheat your oven to 375°F (190°C).
- In a skillet, brown the ground beef on medium heat until fully cooked. Drain the excess fat.
- Stir in the taco seasoning and half of the shredded cheese until everything is well mixed.
- Spread about 1/4 cup of the meat mixture down the center of each flour tortilla.
- Add the diced tomatoes on top of the meat mixture.
- Sprinkle the remaining cheese on top, then gently roll up the tortillas, tucking in the ends.
- Place the roll-ups seam side down in a baking dish.
- Bake for about 15-20 minutes, or until the cheese is bubbly and golden.
Serving
- Serve with a dollop of sour cream on the side for dipping.
Notes
Feel free to add chopped bell peppers or spinach to the beef mixture for extra veggies. Leftover roll-ups can be microwaved for a quick snack.
