Ingredients
  

For the cookie dough
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups semi-sweet chocolate chips
For the cheesecake filling
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • a pinch salt

Method
 

Preparation of the Cheesecake Filling
  1. In a mixing bowl, beat together the softened cream cheese, powdered sugar, vanilla extract, and a pinch of salt until smooth. Set aside.
Mix the Cookie Dough
  1. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy.
  2. Add the eggs one at a time, mixing well after each addition.
  3. Stir in the vanilla extract.
Combine Dry Ingredients
  1. In another bowl, whisk together the flour, baking soda, and salt.
  2. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  3. Fold in the chocolate chips.
Chill the Dough
  1. Chill the dough in the refrigerator for about 30 minutes.
Scoop and Stuff
  1. Preheat your oven to 350°F (175°C).
  2. Using a tablespoon, scoop out some cookie dough, flatten it, and place about a teaspoon of the cheesecake filling in the center.
  3. Gather the edges and seal the dough around the filling.
Bake
  1. Place the stuffed cookies on a lined baking sheet about two inches apart.
  2. Bake for 12-15 minutes until the edges are lightly golden.

Notes
