Cheddar Bay Seafood Pot Pie

Ingredients
  

For the Filling
  • 1 pound mixed seafood (shrimp, scallops, and crab) A combination of seafood is recommended.
  • 1 tablespoon Old Bay seasoning A seafood seasoning blend.
  • 2 cups heavy cream
  • 1 cup frozen peas and carrots Mixed frozen vegetables work as well.
  • 1 cup diced potatoes
  • 1 tablespoon olive oil For sautéing.
  • to taste Salt and pepper Use as desired.
  • 2 tablespoons fresh parsley, chopped For garnish.
  • 1 cup shredded cheddar cheese Adds richness to the filling.
For the Biscuit Topping
  • 2 cups biscuit mix
  • 2/3 cup milk
  • 1 cup shredded cheddar cheese To enhance flavor.
  • 1 tablespoon butter, melted For brushing on the biscuit topping.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat, add mixed seafood and Old Bay seasoning, and cook for 3-4 minutes until just cooked.
  3. Reduce heat to low, add heavy cream, frozen peas and carrots, diced potatoes, salt, and pepper. Stir and let simmer for about 5 minutes.
  4. Stir in shredded cheddar cheese until melted.
Biscuit Topping
  1. In a separate bowl, mix the biscuit mix and milk until just combined.
  2. Fold in cheddar cheese.
Assembly and Baking
  1. Transfer the seafood mixture into a greased baking dish and spoon dollops of the biscuit topping over it.
  2. Brush with melted butter and bake for 20-25 minutes until the biscuits are golden brown and flaky.
  3. Garnish with fresh parsley before serving.

Notes

You can substitute the seafood with chicken or vegetables. This recipe freezes well before baking. Store leftovers in an airtight container in the fridge for up to 3 days.
