  • 1 cup pumpkin puree canned works well
  • 1/2 cup maple syrup
  • 1/2 cup vegetable oil
  • 3 large eggs room temperature preferred
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large mixing bowl, combine the sugars, pumpkin puree, maple syrup, vegetable oil, and eggs. Whisk until smooth.
  3. In another bowl, sift together the flour, baking soda, baking powder, salt, and spices.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Pour the batter into your greased loaf pan, smoothing out the top with a spatula.
Baking
  1. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let your loaf cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
