  • 2 large large sweet potatoes or 3 medium-sized ones
  • 2 tablespoons olive oil for healthy fat
  • 1 tablespoon maple syrup the liquid gold
  • 1 teaspoon cinnamon for warmth
  • ½ teaspoon salt just a pinch
  • ½ teaspoon black pepper to kick things up a notch
  • ¾ cup crumbled feta cheese adds creamy tang
  • ½ cup chopped walnuts for crunch

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Peel the sweet potatoes and slice them into half-inch rounds.
Mixing
  1. In a large bowl, combine the olive oil, maple syrup, cinnamon, salt, and black pepper. Whisk until well blended.
  2. Add the sweet potato slices to the bowl and toss until well coated.
Roasting
  1. Spread the sweet potatoes in a single layer on the prepared baking sheet. Bake for about 25-30 minutes, flipping halfway through, until golden brown and caramelized.
  2. Remove from the oven and sprinkle with crumbled feta and chopped walnuts. Return to the oven for an additional 5 minutes.
Serving
  1. Garnish with fresh parsley, if using, and serve immediately.

Notes

For an indulgent touch, add a quick drizzle of maple syrup before serving. You can substitute walnuts with pecans or almonds if preferred. These sweet potatoes can be prepped in advance and stored in the fridge before baking.
