  • 2 pcs ripe pears (Bartlett or Bosc) Choose ripe pears for optimal sweetness.
  • 4 cups mixed greens (spinach, arugula) You can mix your preferred greens.
  • 1/2 cup crumbled blue cheese This is the star of the salad.
  • 1/4 cup walnuts, toasted Add crunch to the salad.
Dressing
  • 3 tablespoons olive oil Use for dressing and caramelizing.
  • 2 tablespoons balsamic vinegar To tie the flavors together.
  • 2 tablespoons honey To sweeten the caramelized pears.
  • to taste salt and pepper Season to your preference.

Method
 

Caramelizing the Pears
  1. Peel, core, and slice your pears. In a skillet over medium heat, add 2 tablespoons of olive oil and heat it up.
  2. Add the sliced pears and cook for about 3-4 minutes on each side until they are golden brown and caramelized. Drizzle with honey, and cook for another minute.
Preparing the Salad
  1. While the pears are cooking, toss your mixed greens into a large salad bowl.
  2. In a small bowl, whisk together the balsamic vinegar, remaining olive oil, salt, and pepper to create the dressing.
  3. Once the pears are caramelized, layer them on top of the mixed greens. Sprinkle with crumbled blue cheese and toasted walnuts.
  4. Drizzle the dressing over the top and enjoy your salad!

Notes

If you have leftovers, store them in an airtight container—greens may wilt. You can swap blue cheese for feta or goat cheese.
