Ingredients
  

Puff Pastry Components
  • 1 sheet puff pastry, thawed Don’t worry, it’s gonna be our trusty sidekick!
  • 1 egg egg, beaten For that lovely golden shine—because we care!
Filling Ingredients
  • 2 medium onions, thinly sliced Bring on the tears—but it’ll be worth it!
  • 1 cup Gruyere cheese, grated Because cheese makes everything better!
  • 2 tablespoons olive oil For that perfect sauté
  • 1 tablespoon fresh thyme leaves Or 1 teaspoon dried; we want that herb-y flavor
  • to taste Salt and pepper A dash here and a punch there!

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat your olive oil over medium-low heat.
  3. Add your sliced onions and sprinkle with a pinch of salt. Cook them down for about 15-20 minutes, stirring occasionally, until they’re beautifully caramelized and golden brown.
  4. Once the onions are caramelized, stir in the thyme leaves and taste. Adjust salt and pepper as needed.
  5. On a lightly floured surface, roll out your puff pastry to about 1/8-inch thick and cut it into 2-inch squares.
  6. Grease a mini muffin tin or a baking sheet, then place each square of puff pastry into the cups or lay them flat on the baking sheet.
Assembly and Baking
  1. Spoon some of the caramelized onion mixture into the center of each pastry square and sprinkle with a generous amount of Gruyere cheese on top.
  2. Brush the edges of the pastry with the beaten egg.
  3. Bake for 15-20 minutes or until the pastry is puffed and golden brown.
  4. Allow them to cool for a few minutes before serving.

Notes

Make ahead! These bites can be assembled earlier and baked when your guests arrive. If you have leftover caramelized onions, they’re fantastic on pizzas or in soups. Don’t stress if your puff pastry tears—embrace it!
