Preparation
- In a mixing bowl, combine the chocolate cookie crumbs and melted butter until well combined.
- Press the mixture firmly into the bottom of a 9-inch pie dish to form a solid crust. Chill in the fridge.
Make the filling
- In a large bowl, beat together the softened cream cheese and powdered sugar until smooth and creamy.
- Gently fold the heavy whipping cream into the cream cheese mixture until fully integrated and fluffy.
Layering
- Pour in half of the caramel sauce and fold it gently into the filling.
- Spread half of the filling into the chocolate crust and drizzle half of your chocolate ganache over the filling.
- Repeat by dividing the remaining cream cheese mixture over the first layer, then top with the rest of the ganache and caramel sauce.
Chill and Serve
- Cover with plastic wrap and let your pie chill in the fridge for at least 4 hours, or overnight.
- Before serving, top with whipped cream, caramel sauce, and chocolate shavings.
Notes
If your caramel gets lumpy, give it a gentle stir while heating. Store-bought whipped cream can save time. Consider adding crushed nuts or sea salt for added texture.
