Ingredients
  

For the crust
  • 1.5 cups 1 ½ cups chocolate cookie crumbs
  • 0.5 cups ½ cup unsalted butter, melted
For the filling
  • 1 package 1 (8 oz) package cream cheese, softened Ensure the cream cheese is fully softened for easy mixing.
  • 1 cups 1 cup powdered sugar
  • 0.5 cups 1/2 cup heavy whipping cream Whip until soft peaks form.
  • 1 cups 1 cup caramel sauce (store-bought or homemade)
  • 1 cups 1 cup chocolate ganache (1 cup chocolate chips and ½ cup heavy cream) Make your own ganache or use store-bought.
For the topping
  • Extra caramel sauce for drizzling
  • Whipped cream
  • Chocolate shavings (optional) Add for extra decoration.

Method
 

Preparation
  1. In a mixing bowl, combine the chocolate cookie crumbs and melted butter until well combined.
  2. Press the mixture firmly into the bottom of a 9-inch pie dish to form a solid crust. Chill in the fridge.
Make the filling
  1. In a large bowl, beat together the softened cream cheese and powdered sugar until smooth and creamy.
  2. Gently fold the heavy whipping cream into the cream cheese mixture until fully integrated and fluffy.
Layering
  1. Pour in half of the caramel sauce and fold it gently into the filling.
  2. Spread half of the filling into the chocolate crust and drizzle half of your chocolate ganache over the filling.
  3. Repeat by dividing the remaining cream cheese mixture over the first layer, then top with the rest of the ganache and caramel sauce.
Chill and Serve
  1. Cover with plastic wrap and let your pie chill in the fridge for at least 4 hours, or overnight.
  2. Before serving, top with whipped cream, caramel sauce, and chocolate shavings.

Notes

If your caramel gets lumpy, give it a gentle stir while heating. Store-bought whipped cream can save time. Consider adding crushed nuts or sea salt for added texture.
